PINSPIRATION: Soda Can Cupcakes

After reading the post from Cookies & Cups, I was inspired to make some Orange Dreamsicle inspired cupcakes.  Once I realized I had only one 6-cup muffin pan, I decided that Soda Can Cake sounded just a delicious.

To make the Orange Creamsicle Cake, mix one packet of white (vanilla) cake with one can/bottle of room temperature orange soda (I don't know why it needs to be at room temperature since I am not a scientist, but I think if you use cold soda, the Earth will implode).




Empty the package of cake mix into a bowl.  Pour the orange soda slowly (because it will foam up) into the cake mix. Mix together and pour into a greased pan or muffin pan. Bake according to package directions. That's it . . . seriously, that's it. 



For icing, I used Trader Joe's White Frosting Mix (you just need to add butter and hot water).



Once the cake is cool, top with frosting.  I would have preferred to swirl clouds of icing onto the tops of cupcakes, but spreading it all over the top of the cake will have to do.  (Lesson learned: when you are packing to move, don't purge those household items you thought you didn't need.) Add some cute sprinkles to make it festive and ENJOY!
